Cucumber, Vidalia Onion, and Cream Cheese Sandwiches

These might sound best for a dainty tea party, but they are full of flavor. We like to use a combo of white, wheat, and rye bread for a colorful platter of super satisfying sandwiches—they are perfect for just about any occasion.

Ingredients:

2 ounces cream cheese, softened
1/4 cup chopped, pitted kalamata olives
1/2 teaspoon freshly ground black pepper
8 slices white bread, crusts removed if desired
1 medium cucumber, thinly sliced
1 small Vidalia onion, thinly sliced

Instructions:

In a small bowl, beat together the cream cheese, olives, and pepper. Spread each slice of bread generously with the cream cheese mixture. Top 4 slices of bread with cucumber and onion. Cover with the remaining 4 slices bread. Cut sandwiches into halves or quarters.
