If you are less greedy than we are when it comes to eating kringle and you happen to have some leftovers, you can make this luscious bread pudding.
Ingredients:
1 tablespoon unsalted butter, melted
1 1 1⁄2-pound kringle, cubed (about 7 cups), or an equal amount Danish pastries
1⁄4 cup bourbon
1⁄3 cup raisins
8 eggs
3⁄4 cup packed light brown sugar
2 cups heavy cream
3⁄4 cup whole milk
1 tablespoon vanilla
1⁄4 teaspoon salt
Instructions:
Preheat oven to 300°F. Grease a 13×9-inch baking pan with butter and scatter kringle cubes over bottom of pan. In a saucepan, bring bourbon to a simmer; remove from heat. Stir in raisins; let steep for 10 minutes. In a large bowl, whisk together the eggs and sugar. Whisk in remaining ingredients, including the raisins and bourbon. Pour mixture over kringle in pan. Cover with plastic wrap and chill for 1 hour.
Bake the pudding, uncovered, about 1 hour or until just set. Let stand for 10 minutes before serving.
