Man cannot live on fried chicken and cream pie alone. Sometimes we crave a good salad, and this tangy, crunchy recipe has enough cheese and meat to satisfy even the heartiest eater.
Ingredients:
2 heads romaine lettuce
2 medium tomatoes, chopped
4 ounces provolone cheese, cubed
4 ounces salami, cubed
1 ⁄2 cup choppd pepperoncini peppers
2 tablespoons capers, drained
2 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
Pinch salt and freshly ground black pepper to taste
Instructions:
Remove the outer leaves from the heads of lettuce. Chop inner leaves. In a large bowl, place the chopped lettuce and remaining ingredients; toss to combine. Taste and adjust the seasonings, if necessary.
